If you’re like me, you love home cooked food, but time is limited.  Really there is nothing quite like freshly baked bread right out of the oven.  I very rarely have time to spend on kneeding the dough and waiting for it to rise.  Thankfully, about 6-8 years ago my Mom gave me the gift of a bread machine.  This machine has gotten so much use and it is still working great! I make my pizza dough in it, my pasta dough and I let it do all the hard work of preparing my bread dough.  Personally I prefer oven-baked bread, so I always take the dough out of the machine after kneeding and rising, and shape it how I like and use my oven to bake it.

If you don’t have a bread machine, preparing bread dough is a great way to work out any frustrations you might be carrying.  Otherwise, I’ve seen bread machines in pretty good shape in second hand stores lots, because I think for many that prefer to buy their bread, they tend to just take up shelf space and they get rid of them.

Anyway, all this to say that I found this awesome potato bread recipe that is super scrumptious.  If you like bread then you’ll love this Potato Bread with a bowl of hot soup- perfect for a cold wintery day!

Potato Bread

Ingredients

  • 1 yukon gold potato peeled and chopped (about 8 oz/250 g)
  • 1 tsp granulated sugar
  • 1 tsp salt
  • 2 tbsp unsalted butter, softened
  • 3 cups white all purpose flour or bread flour
  • 1-1/2 tsp bread machine yeast

Preparation

In saucepan of boiling salted water, cook potato until tender, 10 to 15 minutes; drain, reserving 3/4 cup (175 mL) of the cooking liquid.Mash potato; let cool to room temperature.Into pan of bread machine, place in order: reserved potato liquid, sugar, salt, butter, mashed potato, flour and yeast. Set on Basic Bread setting.
Note: If you’re like me, check the time that the bread will begin to bake in the machine and make sure to take it out.  Have your oven preheated to 350 degrees farenheit for about 30 minutes or until slightly browned and hollow sounding when you tap it.
